Ingredients

  • 1 pack Frozen puff pastry sheets (thawed)
  • 5 oz Turkish Sucuk (sliced)
  • 1 cup Shredded Kashar cheese (or Mozzarella/Mild Cheddar)
For the Topping
  • 1 large Egg yolk
  • 1 tsp Nigella seeds or Sesame seeds

Equipment

  • Baking Sheet: Large enough to give the bites space to expand.
  • Parchment Paper: To ensure a non-stick bottom and easy cleanup.
  • Pastry Brush: For that essential golden-brown egg wash.
  • Sharp Knife or Pizza Cutter: To get clean, even edges on your pastry squares.

Method

  1. Take the puff pastry sheets out of the freezer and let them soften slightly at room temperature so they are pliable but still cold.

  2. Slice each puff pastry square in half to create two rectangles.

  3. Place a slice of sucuk and a piece of kashar cheese in the center of each rectangle.

  4. Fold the sides of the pastry over the filling to create a neat bundle, or fold it in half and press the edges.

  5. Place the prepared bites on a baking tray lined with parchment paper.

  6. Brush the tops of each pastry bite generously with egg yolk for a deep golden shine.

  7. Sprinkle a pinch of nigella seeds (çörekotu) over the egg wash.

  8. Place in a preheated oven at 200°C (400°F).
